Short description of project
The specific objective of the project was to develop know-how and apply new technologies in functional food preparation from Marasca cherries, directly transferable to production scale. It included production of two new products from Marasca sour cherries using freeze drying and spay drying technologies (freeze dried sour cherry fruit and sour cherry juice powder) as well as the establishment of the laboratory for monitoring biologically activity of functional food. Further objective of the project was education of target groups, final beneficiaries and wider community about functional properties of Marasca cherry and establishing cooperation between local producers, local food processing industry and scientific community.
