Short description of project
Cilj ovog projekta je razvoj novih probiotičkih jogurta od kravljeg i kozjeg mlijeka s dodatkom probiotičkih bakterija, prebiotičkih supstrata i enzima transglutaminaze. Tako dobiveni funkcionalni jogurti bi imali poboljšana tehnološka svojstva koja bi se očitovala u boljoj konzistenciji, izgledu, sinerezi i organoleptici.
